Vovo Biscuits

Ingredients:

For Biscuit Pastry:


- 60 g butter

- ½ cup sugar

- 1 egg

- 2/3 cup plain flour

- 2/3 self-raising flour


For Icing:


- 100 g packet of marshmallows

- 40 g butter

- ¼ cup icing sugar, sifted

- ½ cup desiccated coconut

- 1/3 cup jam


Method:

To make pastry:


- Preheat oven to 180 degrees

- Using electric beaters, beat the butter and sugar in a large mixing bowl until light and creamy.

- Add egg and beat until combined.

- Using a metal spoon, fold in sifted flours. Turn dough onto a lightly floured surface. Knead gently for a minute until smooth.

- Roll out dough to about 4mm thickness. Using a knife or a fluted pastry wheel, cut dough into 4.5 times 6 cm rectangles.

- Place on prepared tray. Re-roll remaining pastry and repeat cutting. Bake for 10 minutes or until lightly golden. Transfer to wire rack when cool.


To make icing:


- Combine butter and marshmallows in small pan. Stir over low heat until marshmallows and butter are melted and smooth.

- Place coconut on sheet of greaseproof paper.

- Working quickly spread about a quarter teaspoon of icing along each long side of biscuit leaving a space in the center. Dip iced biscuit into coconut; shake off excess coconut.

- If your jam is thick place in a small pan to heat till thinned. Spread a little jam down center of each biscuit.
