Aussie Bites

Ingredients:


- 1 cup sifted plain flour

- 1 cup rolled oats

- ½ teaspoon bicarbonate soda

- 1 teaspoon vanilla essence

- ½ cup dried fruits, chopped

- ¼ cup raw sugar

- ¼ cup honey

- ¼ cup butter

- ¼ cup desiccated coconut

- 3 tablespoons flax seeds

- 2 tablespoons hot water

Method:


- In a large mixing bowl, place flour, rolled oats, dried fruit, flax seeds, coconut, sugar and vanilla essence. Mix till incorporated.

- Melt butter then pour in the honey. Stir till combined.

- Dissolve the bicarbonate soda in the hot water. Let it bubble and mix through. Pour into the butter-honey mixture. Stir then add to the flour mixture.

- Mix the dry and wet ingredients till combined. Add ½ cup of milk to loosen. Mix till incorporated and smooth.

- Spoon a tablespoon of the mixture into a prepared muffin tin. Bake at 180 degrees Celsius for 10 minutes or till golden brown and cooked through. Allow to cool slightly and enjoy !
